This limited production early Kalamata displays immediate peppery sensations at the back of the throat followed by lingering spice and pungency throughout the mouth. The combination of picking green, unripe Kalamata fruit and minimal processing resulted in high antioxidant content and more specifically, a very high concentration of Oleocanthal at 445 ppm. Cayenne Whole Pepper Fused Olive Oil
Made at our certified organic mill in Tunisia, this oil is made with whole cayenne peppers crushed with certified organic Tunisian olives. This fused oil is concentrated and has a delightful aroma. It is “hot-sweet” and flavourful with rich, ripe pepper notes like all ripened hot peppers and it’s more floral and fruity. The lovely colour is indicative of the abundant amount of whole, fresh peppers we picked and crushed with the olives. Use as a condiment to kick up your potatoes, roasted vegetables, in marinades and dipping sauces. Fused Jalapeno Olive Oil
Our South Australian Jalapeno fused olive oil is both fruity and spicy. It’s made by combining fresh green, early harvest Frantoio olives with a large portion of FRESH Jalapeno peppers! At harvest we used double the volume of peppers than we traditionally do to really maximize the flavor. These two fresh ingredients are simply crushed together and mixed in a malaxer which releases and combines the green essential oil of the fresh peppers with the olive oil. The resulting marriage boasts lingering spiciness, slightly bitter pleasing green vegetal notes and a vibrant zing from capsaicin. Our Jalapeno fused olive oil adds a savory, tantalizing kick to salsas, marinades, soups, grilled foods, vegetables and more.

Our handcrafted, Roasted Walnut Oil is made in California, strictly following 150 year-old traditional methods. Slowly roasted to perfection, then expeller-pressed and lightly filtered. Our Denisssimo is made from Trebbiano grape must which is naturally caramelized and cooked down to an even greater extent, and aged for EVEN longer in the traditional “Batteria” of Modena. The Gravenstein Apple is an incredibly hard to find varietal due to the difficulty farmers have cultivating it. In addition to contending with a very finicky tree, it’s also not an apple that travels or stores well so it is best enjoyed during its relatively short season and isn’t typically shipped far. It’s grown in pockets up the coast of Northern California and prized for its amazing ambrosia perfume, and crisp, sweet-tart cream colored flesh.
